- 2 tbsp raisins
- 1 tsp curry powder
- Salt and pepper, to taste
- Fresh coriander or parsley, to finish (optional)
Method
1. Shred the chicken. Shred the Plain Whole Roast Chicken Breast Fillet into bite-sized pieces using two forks or your hands.
2. Mix the salad. In a large bowl, combine the shredded chicken, mayonnaise, raisins, curry powder, and Karimix Mango Chutney. Stir thoroughly until every piece of chicken is coated and the mixture holds together.
3. Season and rest. Taste and season with salt and pepper. For the best flavour, let the mix sit in the fridge for at least 20 minutes so the curry powder and chutney can properly work through the chicken.
4. Split the croissants. Slice each Croissant horizontally, leaving a hinge if you like, ready for filling.
5. Fill and finish. Spoon the curry chicken salad generously into each croissant. Finish with a scattering of chopped coriander or parsley, and an extra spoonful of Karimix Mango Chutney on the side if you like it sweeter.
6. Serve. Best served fresh, either straight away or chilled for up to a day for a make-ahead lunch option.
