Loaded BBQ Fries: The Sharing Plate Every Menu Needs
Some dishes don't need reinventing; they just need doing properly. A tray of skin on fries, piled with pulled pork, melted cheese, a hit of jalapeño, and a proper drizzle of sauce, is one of them. The trick is balance: crisp fries underneath, a generous but not soggy topping, and a sauce with enough personality to tie it all together. This recipe leans on Karimix Gochujang BBQ Sauce for that final drizzle, and the result is a smoky, sticky, gently fiery sharing plate that disappears fast off any bar or festival counter.
Here's how we put it together, along with the products we used from our range.
Why This Combination Works
Skin on fries hold their structure under a loaded topping far better than a thin cut chip, so the base stays crisp instead of turning to mush. Pulled pork brings richness and shred, melted cheese binds everything together, and jalapeño cuts through the fat with a clean, sharp heat. Karimix Gochujang BBQ Sauce is what makes it distinctive rather than generic; it's sweet and smoky like a classic BBQ sauce, but with a gochujang backbone that adds a deeper, fermented heat underneath. Drizzled on at the end, it clings rather than drowns.
What You'll Need
Serves 4 (as a sharing plate) | Prep: 10 mins | Cook: 20-25 mins
- 1kg Lutosa Chips Thick Cut, oven-baked or fried until crisp Brayne & Price #16310 — Potato Chip & Coated Vegetable range
- 500g Plain Pulled Pork, warmed through Brayne & Price #57370 — Marinated Meats & Meat range
- 200g Grated Mature Cheese Brayne & Price #27900 — Cheese Grated range
- Karimix Gochujang BBQ Sauce, for drizzling Brayne & Price #90162 — Mayonnaise & Sauce range
- 2 fresh jalapeños, sliced
- Spring onion, sliced, to finish (optional)
Method
1. Cook the fries. Bake or fry the Lutosa Chips Thick Cut until golden and crisp, keeping the skin-on texture intact. Season lightly with salt straight from the fryer.
2. Warm the pork. While the fries cook, warm the Plain Pulled Pork through in a pan or oven until piping hot and starting to catch slightly at the edges for extra flavour.
3. Build the base. Tip the hot fries onto an ovenproof platter or tray and pile the warmed pulled pork evenly across the top.
4. Melt the cheese. Scatter the Grated Mature Cheese generously over the pork and fries, then return to a hot oven or under the grill for 2-3 minutes until melted and bubbling.
5. Finish and serve. Drizzle generously with Karimix Gochujang BBQ Sauce, scatter over the sliced jalapeños and spring onion, and serve immediately while everything is hot and the cheese is molten.
A Few Notes From the Kitchen
Layer, don't drown, the sauce goes on last so it stays glossy rather than sinking into the fries. For a chicken version, swap the pulled pork for shredded Hot & Spicy Chicken Fillet for a spicier, leaner base. These work brilliantly as a bar snack, a festival food stall centrepiece, or a sharing starter for the table.
