- 1 red pepper, sliced
- 1 courgette, diced
- 1 red onion, sliced
- 1 tbsp vegetable oil, for roasting
- Fresh coriander, roughly chopped, to finish
- Crushed peanuts, to finish (optional)
Method
1. Bake the potatoes. Bake the Jacket Potatoes Large at 200°C for 60-70 minutes, or until the skins are crisp and the centres are fluffy.
2. Roast the chickpeas and vegetables. Toss the roughly chopped Falafel Chick Pea and Roast Peppers with the sliced red pepper, courgette, and red onion in a little oil. Spread on a tray and roast for 20-25 minutes, turning once, until caramelised at the edges.
