Satay Noodle Salad: A Cold Sharing Plate With a Proper Dip

A good noodle salad earns its place on any menu, light, fresh, and endlessly adaptable, but it needs a sauce with real character to pull it together. This version tosses cold rice noodles with shredded vegetables, herbs, and chopped peanuts, all coated in a rich satay dressing, then served with a extra bowl of the same sauce on the side for dipping. This recipe leans on Karimix Satay Sauce Vegan to do double duty, both as the dressing and the dip, and the result is a versatile, crowd-pleasing cold plate that works as a starter, a side, or a light main.

Here's how we put it together, along with the products we used from our range.

Why This Combination Works

Cold noodle salads live or die on the dressing, too thin and it slides straight off, too heavy and it clumps the noodles together. Karimix Satay Sauce Vegan strikes the right balance, rich and nutty with enough body to coat every strand without drowning the fresh vegetables and herbs underneath. Serving a second bowl of the same sauce alongside as a dip means people can add as much or as little extra richness as they like, and it keeps the dish feeling generous rather than one-note.

What You'll Need

Serves 4 (as a sharing plate) | Prep: 20 mins | No cook (noodles per pack instructions)

  • 250g rice noodles, cooked, cooled, and drained
  • Karimix Satay Sauce Vegan (for the dressing and the side dip) Brayne & Price #90160 — Mayonnaise & Sauce range
  • 1 carrot, julienned or shredded
  • ½ cucumber, julienned or shredded
  • 1 red pepper, thinly sliced
  • 2 spring onions, sliced
  • A large handful fresh coriander, roughly chopped
  • A handful fresh mint leaves, roughly chopped
  • 50g peanuts, roughly chopped
  • 1 lime, juiced
  • 1 tsp soy sauce (optional, to taste)

A note on the produce: the rice noodles, shredded vegetables, herbs, and peanuts aren't currently stocked lines at Brayne & Price, so these are ones to source from your usual fresh or dry goods supplier. The Karimix Satay Sauce Vegan carrying both the dressing and the dip is what makes this a B&P-led dish.

Method

1. Cook and cool the noodles. Cook the rice noodles according to pack instructions, then drain and rinse under cold water until fully cooled, to stop them sticking together.

2. Prep the vegetables and herbs. Julienne or shred the carrot and cucumber, thinly slice the red pepper and spring onions, and roughly chop the coriander and mint.

3. Make the dressing. In a small bowl, loosen 4-5 tablespoons of Karimix Satay Sauce Vegan with the lime juice and a splash of water until it reaches a pourable, dressing consistency. Add a dash of soy sauce if you'd like extra depth.

4. Toss the salad. In a large bowl, combine the cooled noodles, carrot, cucumber, red pepper, spring onion, coriander, and mint. Pour over the loosened satay dressing and toss thoroughly until everything is well coated.

5. Finish and serve. Pile onto a platter or into bowls, scatter with chopped peanuts, and serve alongside a small bowl of warmed Karimix Satay Sauce Vegan as a side dip for extra richness.

A Few Notes From the Kitchen

Loosen, don't dilute, the dressing needs just enough liquid to coat the noodles evenly without losing the sauce's richness. This salad holds well for a few hours if kept covered and dressed just before serving, making it a strong option for buffets or grab-and-go boxes. For a heartier version, add shredded roast chicken or crumbled roasted chickpeas on top.
